If you’ve purchased a whole pineapple, then realized that you won’t be able to consume it before it expires, you can safely store it in the freezer for later use. Before stowing the tropical fruit in your freezer, however, it must be prepared properly. Remove the tough exterior skin and fibrous core, then parse into smaller pieces.

Prepare a whole pineapple for the freezer by first cutting away the tough skin. Cut the pineapple in half, lengthwise, then into quarters. Remove the fibrous core by cutting away the interior tip from each quarter. For smaller cubes, slice the quarter in half lengthwise. For larger wedges, leave the quarter intact. Make evenly spaced crosswise cuts across the pineapple quarters.
Arrange the pineapple cubes or wedges in a single layer on a baking sheet and freeze. This is to prevent the pieces from sticking together and to accommodate expansion. Transfer the frozen pineapple pieces into a tightly sealed freezer-safe storage container or bag. Label the container with the freeze date to keep track of when it should be used by. Pineapple will last around 3 to 5 months in the freezer. Freezing pineapple diminishes its flavor slightly, so frozen pineapple is best used in smoothies, or thawed and used for making jam or in baked goods.
