These cookie bars are actually made using prepackaged sugar cookie mix. They're baked in a square pan and frosted using store-bought funfetti icing. As a little trick, we used melted butter instead of softened butter to make mixing easier. Melted butter also creates chewier cookies—a definite plus in my book. Things You'll Need

  • Large mixing bowl

  • Silicone spatula

  • Offset spatula

  • 8x8-inch baking pan

  • Parchment paper

  • Wire rack

  • Sugar cookie mix

  • 1 stick unsalted butter, melted and cooled

  • 1 egg, room temperature

  • Funfetti vanilla frosting

  • Red or pink food coloring

Preheat oven to 350°F and line baking pan with parchment paper.

In a large mixing bowl, combine the package of sugar cookie mix, 1 stick melted butter and egg. Use a silicone spatula to mix until dough comes together and no dry spots remain.

Transfer cookie dough into lined baking pan. Use silicone spatula to flatten dough into an even layer.

3. Bake

Bake cookie dough for 25-30 minutes or until edges are golden brown. Place pan on wire rack and let cookies cool in pan for about 45 minutes.

4. Dye frosting pink

Open vanilla frosting container and add a drop of red food coloring. Mix using offset spatula until color is uniform.

Tip

If frosting is too thick to mix, pop the container in the microwave for about 10-15 seconds.

Using your offset spatula, spread frosting evenly over cookie square.

6. Add sprinkles

Top frosting with sprinkles. If you'd like the frosting to set a bit more, you can refrigerate the cookie square in the fridge for about 20 minutes. Otherwise, remove the cookie square from the pan, slice into 16 pieces and enjoy!

To store cookie bars, keep them in an airtight container at room temperature for up to 5 days.
