Chickpeas are seasoned and roasted until golden brown and then tossed with a medley of dried cranberries, chocolate chips, sunflower seeds, coconut flakes ‌and‌ chopped pecans. The result is a satisfying snack that's bursting with flavor.

As a bonus, this DIY chickpea snack mix is highly customizable. You can replace the dried cranberries with chopped dried mango or apricot. If you prefer a more spicy kick, go for crystallized ginger. You can also use other seeds (like pumpkin seeds) or nuts (like peanuts, almonds or cashews). If you want to make it nut-free, simply omit the nuts.

Things You'll Need

  • 15 oz. canned chickpeas (about 1 1/2 cups)

  • 1/2 Tbsp. olive oil

  • 1 Tbsp. maple syrup

  • 1 tsp. salt

  • 1/2 tsp. ground cinnamon

  • 1/4 cup sunflower seeds

  • 1/3 cup chopped pecans

  • 1/3 cup coconut flakes

  • 1/3 cup chocolate chips

  • 1/3 cup dried cranberries

1. Roast chickpeas

Preheat the oven to 400°F and line a baking sheet with parchment paper or a silicone mat. Drain the chickpeas.

Spread the chickpeas in a single, even layer on the baking sheet. Pat them dry with a clean paper towel.

Roast for 10 minutes and then remove them from the oven.

Tip

To make the chickpeas extra crispy, roast them without oil or spices first. You will add these ingredients halfway through the roasting process.

Drizzle olive oil and maple syrup on the chickpeas and then sprinkle them with cinnamon and salt. Carefully toss with a spatula.

Return them to the oven for 7 to 10 minutes or until the chickpeas are golden brown and crispy. Let them cool.

Once the chickpeas are cool, transfer them to a large bowl. Add sunflower seeds, pecans, coconut flakes, chocolate chips and dried cranberries. Toss to combine.
