Before making the same meal as usual tonight, consider cooking skirt steak on your grill. You are probably familiar with skirt steaks, due to their prominent presence in fajitas. A skirt steak is full of flavor and comes from the diaphragm of a cow. The steak cooks best on the grill once the steak marinates. Marinating the skirt steak helps tenderize it. Once you learn how to grill skirt steak, you'll have another inexpensive and quick dinner option.
Things You'll Need
- 1 8 oz. skirt steak
- Meat mallet
- 1 tbsp. sugar
- 1 tbsp. salt
- 1 tbsp. ground pepper
- 1 tsp. cayenne pepper
- 1/4 cup olive oil
- Cooking thermometer

Trim the excess fat from the skirt steak. Use a meat mallet to help tenderize it.
Combine sugar, salt, ground pepper and cayenne pepper in a mixing bowl. Mix the dry ingredients together. Add one-fourth of a cup of olive oil to the dry mixture. Stir the olive oil completely into the mixture, creating a dry paste.
Rub the seasonings onto the skirt steak. Ensure that you cover both sides of the skirt steak with the seasoning rub.
Place the skirt steak in a sealed bag or container. Refrigerate the steak for 12 to 24 hours to marinate it with the seasoning.
Remove the skirt steak from the refrigerator. Allow the steak to sit out at room temperature for only one hour. Do not leave the steak out longer than 2 hours to prevent the growth of bacteria.
Preheat the grill for the steak at medium-high. Try to maintain the grill’s temperature around 300 to 350 degrees. If you are using a charcoal grill, allow the coals to heat for 30 minutes. This will allow the fire to burn down and will prevent your meat from burning.
Sear the skirt steak on the grill. Place the steak directly on the grill, and sear it for two minutes. Once the skirt steak sears, flip the steak over and sear it for an additional two minutes. Only turn the skirt steak over once on the grill.
Remove the steak from the grill once it has an internal temperature of 160 to 170 degrees. Serve the skirt steak immediately.
