The ease and convenience of Chinese take-out can't be beat; however, you have no control over what goes into the food you're eating. Can you really be sure the chef isn't using MSG just because he says he doesn't? Fortunately, Chinese cooking is quick and easy to do at home, and you have the benefit of controlling your ingredients to make your dish as healthy as possible. A good place to start is with a simple fried rice made into a main dish by the addition of shrimp.
Things You'll Need
- 1 cup fully cooked rice, white or brown
- 1 lb. shrimp, peeled and deveined
- 1 tbsp. minced garlic
- 4 tbsp. vegetable oil
- 1 onion, diced
- 4 large mushrooms, sliced thin
- 2 eggs, lightly beaten
- 1/2 cup shredded carrots
- Salt and pepper to taste
- Soy sauce to taste
- Green onions, sliced for garnish
In a large skillet, heat 2 tbsp. of vegetable oil over medium-high heat. Add the onion, mushrooms and carrots. Saute until crisp tender, and then add the garlic and shrimp. Cook until shrimp turn pink.
Push the shrimp and vegetables to the sides of the skillet, or remove them completely into a bowl. Add the remaining 2 tbsp. of vegetable oil in the center of the skillet, and add the eggs.
Scramble the eggs, and add the rice, salt and pepper and soy sauce. Mix thoroughly. Add in the vegetables (if they've been separated out), and heat through.
Garnish with the sliced green onion, and serve with additional soy sauce.
