Spaghetti squash is a low calorie food, with only about 37 calories per 4-oz. serving. Spaghetti squash can be cooked in a variety of different ways, such as grilling, boiling, slow cooking, and microwaving. Roasting is a popular method and is very easy to do.

Step 1

Rinse the squash with cool water to remove any dirt or debris and pat dry. With a sharp knife, cut the spaghetti squash in half lengthwise. Scoop out the seeds with a large spoon and drizzle about 1 tsp. of olive oil into each half. Spread the olive oil around using your fingers. Add salt and pepper for added flavor.

Step 2

Preheat the oven to 375 degrees. Grease the bottom of a baking pan with olive oil, and place the spaghetti squash halves face down on the pan.

Step 3

Set the baking pan on the middle rack inside the oven and bake for approximately 35 to 45 minutes, or until the squash is tender. Remove the spaghetti squash from the oven and let it sit for about 5 minutes before serving.
