Peaches and plums are the perfect picks for roasting because after spending just a little time in the oven, they become tender, juicy, and flavorful treats. And best yet, this roasting method is so easy. Once cooked, you can eat them as is, or spoon them over ice cream, yogurt, pancakes, and more.
Things You'll Need
1 1/2 lb. peaches and plums
2 Tbsp. lemon juice
3 to 4 Tbsp. granulated sugar
8-in by 8-in. square baking pan

1. Prepare the oven and the stone fruit for cooking
Heat oven to 400°F. Halve the peaches and plums, remove their pits, and quarter them.

Tip
For even roasting, it is important to cut the fruit into pieces that are similar in size. If you have larger pieces of fruit cut them into eighths, and for smaller pieces, simply cut them in half.
2. Mix the plums and peaches, and then bake
Place the prepared fruit in the baking pan, add the lemon juice and sugar, and toss well to coat. Place pan in the oven and bake for about 20–25 minutes or until the fruit is fork-tender, but still maintains its shape.

Tip
To keep your fruit extra juicy, brush the peaches and plums with the juices from the pan halfway through the baking time with a pastry brush.
3. Cool the fruit before serving
