Salmon, a hearty fish with a lot of beneficial fats, stands up well to almost any seasoning. Whether cooking for one or a hundred, salmon is very versatile and easy to prepare. The following recipe uses herbes de Provence, a blend of herbs common to the South of France available in major grocery stores.
Things You'll Need
1 small glass or ceramic baking dish with cover
Extra virgin olive oil
6-oz salmon fillet
1 teaspoon lemon juice
Salt to taste
1 teaspoon herbes de Provence
Salmon with Herbes de Provence
Preheat the oven to 350 degrees Fahrenheit.
Brush the baking dish with olive oil and place the fish in the baking dish. If the salmon has skin, place the fish skin-side down
Brush the top and sides of the fish with olive oil.
Sprinkle the top of the fish with the lemon juice, salt and herbes de Provence.
Cover and bake on the center rack of the oven for 20 to 25 minutes, or until the fish flakes easily with a fork.
Use your hands to sprinkle on the herbes de Provence. It expresses the oils in the dried herbs and brings out more flavor.
