You can enjoy fresh strawberries on shortcake with cream or as part of a cool, refreshing parfait. Partner some fresh strawberries with ice cream, other fruit or nuts for a delicious dessert, or make parfaits with yogurt and granola for a healthful snack or breakfast treat. Choose large, fresh berries for the best results.
Things You'll Need
Other fruit (optional)
Yogurt or ice cream
Whipped cream or whipped topping (optional)
Granola or other cereal (optional)
Fresh mint (optional)
Lemon slices (optional)
Sprinkles or other toppings (optional)
Clean and slice the fresh strawberries. Reserve enough whole strawberries to have one to put on top of each completed parfait before serving. Put the sliced strawberries in a small bowl and sprinkle them with sugar. Leave the berries in the sugar for 5 to 10 minutes until they start to release their juice. If you want to add other fruits to your parfait, such as bananas or blueberries, clean and prepare them at the same time as the strawberries.
Put a layer of strawberries in the bottom of each parfait dish. Top the berries with a layer of vanilla ice cream or vanilla yogurt. For a richer alternative, whip some heavy cream until peaks form, blend in a little cinnamon or nutmeg, then layer the cream over the berries. Top it with another layer of berries and another dollop of the ice cream, yogurt or cream. If you are using a tall parfait glass for an elegant dessert, repeat the layers until the cup is filled, then top it with a little whipped cream.
Add a layer of your favorite granola or crunchy breakfast cereal to create a healthy snack or a breakfast-style parfait. Put the cereal in the parfait cup before adding the berries; then add berries and a layer of low-fat vanilla or strawberry yogurt. Add more berries and additional fruit, such as sliced bananas or fresh blueberries. As an alternative to packaged cereal, begin your parfait with a layer consisting of whole oats, sunflower seeds and almond slivers. If you prefer a parfait without a full cereal layer, just sprinkle some granola on top after layering the fruit and yogurt in the parfait cup.
Top each completed parfait with a whole strawberry. A sprig of fresh mint or a decorative slice of lemon makes an elegant addition to a parfait served as dessert. For kids' parfaits, top with colorful sprinkles or mini-candy or chocolate chips.
For a more healthful, low-fat alternative, use low-fat yogurt and fresh fruit. Sprinkle a few spoonfuls of granola or slivered almonds on top for added crunch.
As an alternative to fresh strawberries, use frozen strawberries: Thaw the fruit, mash it slightly; then add it in layers, along with a little of the juice.
You can use prepared whipped topping in placed of whipped cream, either the plain, vanilla or strawberry variety.
