How to Make Roasted Red Pepper and Feta Dip

This dip is really easy to make and is a crowd pleaser. Serve with pita, pita chips or tortilla chips.

Things You'll Need

  • 4 red bell peppers

  • 1/4 cup extra-virgin olive oil

  • 2 garlic cloves

  • 2 cups crumbled feta cheese

Step 1

Char peppers over a gas flame or in a broiler until blackened on all sides.

Step 2

Enclose in a paper bag for 10 minutes.

Step 3

Peel, seed, and quarter peppers.

Step 4

Puree peppers, oil, garlic and cheese in processor. Season with salt and pepper.

Step 5

Chill for at least 3 hours or overnight.
