  • 6 large eggs

  • 1/4 tsp. salt

  • 1/4 tsp. black pepper

  • 2 cups spinach, washed and dried, roughly chopped

  • 5 mini breakfast sausage links, cut up into bite-size pieces (about 3/4 cup)

  • 1/2 cup crumbled feta cheese

  • 1/2 cup canned diced tomatoes, drained (or use fresh)

  • 1/4 cup shredded cheddar (optional)

1. Crack the eggs

Preheat your oven to 350°F. Crack all 6 eggs into a large mixing bowl.

2. Add salt and pepper

Add salt and pepper to the eggs.

3. Chop the spinach
