One Pot Taco Mac & Cheese Recipe

My husband was working from home as I made this. He kept wandering into the kitchen to figure out what smelled so good, and to see if he could have a bowl. After I was done, I brought him a big serving topped with all the garnishes, and it took him a little more than a minute to clean the bowl. His assessment is that this is the bowl of warm comfort food that we all need right now, and I certainly agree!

Things You'll Need

  • 1 tablespoon olive oil

  • 1 cup diced white onions

  • 1 pound lean ground beef

  • 1 packet taco seasoning

  • 1/2 pound (about 2 ½ cups) elbow macaroni

  • 1 cup water

  • 2 cups chicken broth

  • 2 cups grated cheddar cheese

  • ½ cup sour cream

  • ½ chopped tomatoes

  • ¼ chopped cilantro

Step 1: Brown the Onions

Add the olive oil and onions to a large pot over medium-high heat. Cook until the onions have started to brown.

Step 2: Cook the Beef

Add the beef, stirring and breaking it up until it's browned. Then stir in the seasoning packet.

Step 3: Cook the Mac

Add the macaroni, broth and water. Cook until the macaroni is cooked and the liquid is mostly gone.

Step 4: Stir in the Cheese

Add the cheese and stir until the cheese has melted and combined.

Step 5: Plate and Garnish

Spoon the Taco Mac into bowls, then top with sour cream, cilantro, and tomatoes.
