One Pot Taco Mac & Cheese Recipe

What's better than a big bowl of mac and cheese? A big bowl of mac and cheese with a taco twist! Adding ground beef, taco seasoning, and toppings such as sour cream and tomatoes, this classic dish gets a delicious flavor boost. Plus, everything can be made in one pot. Who doesn't love that?

Things You'll Need

  • 1 Tbsp. olive oil

  • 1 cup diced white onions

  • 1 lb. lean ground beef

  • 1 packet taco seasoning

  • 1/2 lb. (about 2 ½ cups) elbow macaroni

  • 1 cup water

  • 2 cups chicken broth

  • 2 cups grated cheddar cheese

  • ½ cup sour cream

  • ½ chopped tomatoes

  • ¼ chopped cilantro

1. Brown the onions

Add the olive oil and onions to a large pot over medium-high heat. Cook until the onions have started to brown, stirring occasionally.

2. Add the beef and seasoning

Add the beef, stirring and breaking it up until it's browned. Then stir in the seasoning packet.

3. Add the macaroni and liquid

Next, pour the macaroni, broth, and water into the pan. Cook until the macaroni is soft and the liquid has reduced and is mostly gone.

Check the cooking time on the pasta package for accuracy.

4. Stir in the cheese

Add the cheese and stir until the cheese has melted and combined.

Tip

Freshly grated cheese adds more flavor, however if you are short on time, packaged shredded cheese is an easy solution.

5. Garnish and serve

Spoon the Taco Mac into bowls, then top with sour cream, cilantro, and tomatoes.
