Dessert Grilled Cheese Recipes

Love grilled cheese? How about dessert grilled cheese? These three dessert grilled cheeses are perfect for brunch, the type of gathering where it's perfectly acceptable to serve stuffed french toast, glazed doughnuts, or loaded waffles. Each recipe makes one sandwich, but could easily be scaled up to accommodate a crowd.

The S'mores Grilled Cheese is total campfire decadence, oozing with marshmallow fluff and chocolate. Kids (and grown up kids) will love this one. For an equally gooey sandwich with slightly more refined flavors, try the Nutella, Brie and Blueberry Grilled Cheese. Brie adds a slight earthiness, and blueberries basically make it healthy. (Right?) Finally, we have the Caramel, Apple and Cheddar Grilled Cheese. This is a bit closer to a traditional grilled cheese, with cheese that doesn't ooze quite as much. However, caramel sauce takes it into dessert territory without making it overly sweet.

Things You'll Need

  • Unsalted butter, softened

  • 6 slices white bread

  • 3 tablespoons marshmallow fluff

  • 3 tablespoons mascarpone cheese

  • 1 graham cracker, divided into 4 pieces

  • 1 (1.55 oz) Hershey bars, divided into 4 pieces

  • 1/3 cup blueberries

  • 1/4 teaspoon powdered sugar

  • 2 tablespoons Nutella

  • 2 to 3 ounces brie cheese

  • 1 tablespoon caramel sauce

  • Granny Smith apple slices (about 1/4 apple)

  • 3 to 4 slices mild cheddar cheese

S'mores Grilled Cheese

Step 1: Build the Sandwich

In a small bowl, combine the marshmallow fluff and mascarpone cheese. Spread equally between two slices of white bread. Top one half with the graham crackers and the other half with the chocolate bars. Close the sandwich.

Step 2: Cook the Grilled Cheese

Place a skillet over medium heat and allow it to get nice and hot. Generously butter each side of the sandwich. Cook for 3 to 4 minutes per side, or until the bread is nicely toasted and the inside of the sandwich is melted.

Step 3: Serve Immediately

Slice in half and serve! If it's too messy to pick up, go ahead and use a fork and knife.

Nutella, Brie and Blueberry Grilled Cheese

Step 1: Cook the Blueberries

Option 1: Using a small saucepan, heat the blueberries over medium-low heat with 1 tablespoon of water. Once they darken in color, 2 to 3 minutes, remove from the heat and mash using a potato masher or fork. Stir in the powdered sugar.

Option 2: Place the blueberries in a ramekin. Cover loosely and microwave for 30 seconds. Check to see if they've darkened in color. If not, continue heating in 15 second increments until the blueberries are dark, then mash and stir in the powdered sugar.

Step 2: Build the Sandwich and Cook

Spread the Nutella on one slice of bread. Place the brie on a second slice, then top with the blueberries. Close the sandwich and butter both sides very generously.

Place on a hot skillet set over medium heat, and cook for several minutes per side until the bread is toasted and the brie is oozing out the sides.

Caramel, Apple and Cheddar Grilled Cheese

Step 1: Build the Sandwich

Spread the caramel sauce on one slice of bread. Top with several apple slices. Place the cheddar cheese on the other slice of bread. Close the sandwich and butter both sides of the bread.
