One of my absolute favorite flavors to work with is ube, a purple yam native to the Philippines. If you've never had ube before, it tastes similar to a cross between vanilla and pistachio. It's commonly found in desserts like ice cream, cookies, and cake.

Things You'll Need

  • 1 1/3 cup all-purpose flour

  • 1/2 tsp. baking soda

  • 1/2 tsp. salt

  • 1/2 cup unsalted butter, melted and cooled

  • 1/8 cup dark brown sugar

  • 1/2 cup granulated sugar

  • 1 egg

  • 3 Tbsp. ube halaya

  • 1 1/2 tsp. ube extract

  • 10 golden Oreos, crushed, plus more for topping

1. Mix the butter and sugars

Preheat the oven to 350°F. Line two baking sheets with parchment paper.

In a large mixing bowl, mix together 1/2 cup melted butter, 1/8 cup dark brown sugar, and 1/2 cup granulated sugar until combined.

2. Stir in egg and ube

Add an egg, 3 tablespoons ube halaya, and 1 1/2 teaspoons ube extract. Mix until smooth.

3. Mix in the dry ingredients

Stir in all of the dry ingredients (except for the golden Oreos) until most dry spots are gone.

4. Fold in the golden Oreos

Fold in the golden Oreos until they are spread throughout the batter.

5. Scoop the batter

Scoop the batter (about 2 to 3 tablespoons for each ball) and place them on a lined baking sheet about 3 to 4 inches apart. Top them with more crushed golden Oreos or a whole Oreo.

6. Bake the cookies

Bake for 10 to 13 minutes or until the edges are set. Let them cool on the pan for 5 minutes and then transfer them to a wire rack to fully cool.

Store the cookies in an airtight container at room temperature for up to 5 days.
