"So now I got my steak ready to go and what we are going to do is sear it off. The reason we want to sear is we want to get that caramelization on the outside of our steak before we finish it off in the oven. So I got a pot sauce pan or saute pan ready to go and I'm going to put a little bit of vegetables at the bottom. That is really going to help us get a nice crust outside of our steak. I'm going to go ahead and put it in faced side down for a few minutes. The thing is you want to put it in and let it sit. Don't try to let it move around, let it get nice and dark on the outside. As you can see I got a really nice dark crust on the steak and that is what I exactly what you want. But we are going to go ahead and make sure we get the other side as well. So I'm going to set this in here and as it caramelizes but the sugar on the outside of the steak is going get nice. That is what makes that nice caramelized color on the outside of the steak. So now if you look at my roulade I got a beautiful caramelized on all four sides here. I just wanted to show you so you know how it looks like before you put it in the oven. So I'm going to place it in the oven."
