Hi, this is Michael Ballon from Castle Street Cafe. And today, we're going to demonstrate how to make breasted chicken stuffed with asparagus. It's a perfect spring time dish. Trim off any excess fat from the chicken breasts and use a heavy meat mallet to pound up the chicken as thin as possible without breaking it. Trim the stems off the asparagus, blanch for one minute in boiling water, plunge in ice water afterwards. Drain the asparagus well. Spread out the chicken breasts on a work table, sprinkle the grated Swiss cheese over the surface. Then divide the mushroom slices on each piece of chicken. Place the asparagus on top of the mushrooms and roll up the chicken breasts as tightly as possible. Heat some olive oil in a saute pan, season the rolled chicken with salt, pepper and fresh thyme. And brown on all sides for about one minute each. Place the whole skillet in a 350 degree oven for five minutes until done. Remove the chicken from the oven and if you like, you can slice in half to see the inside of the stuffed chicken. And serve on top of mashed potatoes. This technique of using a mallet to pound out chicken breasts thinly is something you can do with a lot of different stuffing. It's a very versatile way to prepare chicken.
