Chia seeds are very nutritious and useful for more than just Chia Pets. They are great for eating low carb and healthy.

This spicy little cake uses ground chia seeds to make a dessert reminiscent of apple bread pudding.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • FOR CAKE:
  • 2 tablespoons salted butter
  • 1 large egg
  • 1/4 cup sugar-free Da Vinci Amaretto syrup
  • 2 teaspoons powdered erythritol
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1/3 cup ground chia seeds
  • FOR SPICE GLAZE:
  • 1 tablespoon salted butter
  • 1 tablespoon powdered erythritol
  • 1/2 teaspoon Fiberfit liquid
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon vanilla
  • Pinch of salt
  • Oil or spray for greasing bowl
  • Microwave oven
  • Microwave-safe bowl (about 2 cups)
  • 2 small microwave-safe mixing bowls
  • Whisk
  • 1 or 2 mixing spoons
  • Saucer for serving
  1. Step 1

    Grease the 2-cup microwave-safe bowl and set it aside.

  2. Step 2

    In a small microwave-safe mixing bowl, microwave the butter for the cake until melted.

  3. Step 3

    Whisk the remaining cake ingredients into the melted butter in the order given, making sure the ingredients are blended well before and after adding the chia seeds.

  4. Step 4

    Let the batter sit for 10 minutes.

  5. Step 5

    Pour the batter into the prepared 2-cup bowl and microwave on high for 3 1/2 minutes. Let the cake sit for 5 minutes to finish cooking.

  6. Step 6

    While the cake is sitting, microwave the butter for the glaze in the other mixing bowl.

  7. Step 7

    Stir the remaining glaze ingredients into the melted butter and mix until smooth.

  8. Step 8

    When the cake is finished cooking, carefully turn the bowl upside down onto the saucer to remove the cake.

  9. Step 9

    Cover the cake with the glaze and serve it while it's still warm.

Tips & Warnings
  • This recipe makes 1 serving with about 4 net carbs.
  • A Corelle Ware cereal bowl works well for cooking the cake.
  • You can grind your own chia seeds in a coffee grinder or buy them already ground.
  • You can use white or black chia seeds in this recipe.
  • Do not use chia seeds from a Chia Pet; buy food grade chia seeds.
  • Make sure to let the cake batter sit for 10 minutes for the seeds to absorb the liquid.
