How to Make a Low Carb Spicy Chia Pudding Cake

- 1/3 cup butter
- 1/2 cup sugar substitute
- 1 egg
- 1 tsp. vanilla extract
- 1/3 cup chia seeds
- 1/2 tsp. ginger powder
- 1 tbsp. ground cinnamon
- 1/2 tsp. nutmeg powder
- 5 tbsp. dry coconut powder
- 1 cup almond meal or almond flour
- 1 tsp. baking powder
- 3 tbsp. chopped dates
- 10 cashews, chopped
- 8-inch round baking pan

Preheat oven to 350 F. Grease an 8-inch round pan and set aside.

Cream butter and sugar substitute until light and fluffy. Add one egg and beat until well-blended.

Add vanilla extract and chia seeds. Mix well and add spice powders and coconut powder. Allow the batter to rest for 10 minutes so that the chia seeds can soak and form a gelatinous "pudding-like" texture.

Fold in almond meal and baking powder gently. Add cashews and dates, mixing carefully so that the gel does not disintegrate.
