How to Make Oatmeal Scotchies

  • 1 1/4 c. all-purpose flour
  • 1 tsp. baking soda
  • 3/4 c. packed brown sugar
  • 1 c. softened butter or margarine
  • 2 c. (12 oz.) butterscotch chips
  • 1/2 tsp. cinnamon
  • 2 eggs
  • 3/4 c. granulated sugar
  • 3 c. rolled oats
  • 1/2 tsp. salt
  • 1 tsp. vanilla or 2 tsp. grated orange peel

Instructions

      Heat oven to 375 degrees F.

      Beat together butter or margarine, sugars, eggs, and vanilla or orange peel until creamy.

      Combine flour, baking soda, salt, and cinnamon and add to the butter mixture gradually, beating well.

      Stir in remaining ingredients.

      Drop by level tablespoons onto an ungreased cookie sheet.

      Bake 7 to 8 minutes for a chewy cookie or 9 to 10 minutes for a crisp cookie.

      Cool 2 minutes on cookie sheet, then remove to wire rack.
