    • 1 cup sour cream
    • 1/4 to 1/2 cup buttermilk
    • 1 clove garlic, crushed,
    • 1/4 to 1/2 cup finely grated Parmesan cheese
    • Salt and pepper to taste

        Combine the sour cream, garlic, a few grinds of black pepper and 1/4 cup of Parmesan cheese in a mixing bowl. Stir well, making sure the cheese is thoroughly mixed in.

        Begin adding the buttermilk a little at a time, whisking as you go, until the dressing reaches the desired consistency.

        Taste the result to make sure you like it. If you want a cheesier flavor, now is time to add more Parmesan. Mix well, and taste. Parmesan cheese is salty, so you may not need to add any additional salt. Refrigerate the dressing for about an hour and then taste again. If it needs more salt, add just a little bit at a time, mix well and taste.

        Pour the dressing into a jar or plastic container and seal. Refrigerate at least two hours before serving.
