This is a really good spring recipe for macadamia halibut. It is my mother's favorite fish dish. You can serve this with pineapple salsa the recipe is in the resource section. This macadamia halibut goes well with other fruit sauces as well.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 pieces of halibut
  • ½ cup crushed macadamia nuts
  • 1 cup panco or other light bread crumbs
  • 1 cup flour
  • 2 eggs
  • salt and pepper
  • olive oil
  1. Step 1

The first thing that you will need to do in your macadamia halibut is set up a breading station. Lay the flour in one pan, whisk eggs and a slash of water to make a egg wash in a bowl and then combine panco and the crushed macadamia nuts in another.

  2. Step 2

Now you will want to bread the halibut by first covering it with flour, then egg wash then the macadamia mixture.

  3. Step 3

Now take your sauté pan and add olive oil. Preheat oven to 350 degrees. Get this real hot not smoking but hot enough that you can hear the fish when you put it in the pan. Once the halibut is brown on one side flip it and let it brown on the other side. This should only take a few minutes. Put the halibut on a baking sheet and put in the oven until the halibut begins to flake away when you press on it. The cooking time will vary by the size of the halibut steak
