Things You'll Need:
- 12 corn tortillas (torn into quarters)
- 1 cup homemade Turkey Stock
- Vegetable Oil
- 1 cup chopped, cooked turkey meat
- 1 1/4 cups green taco sauce or Tomatillo Salsa
- 1/2 cup grated Muenster cheese

Step 1
Preheat the oven to 200 degrees. Place the tortillas on a baking sheet and bake them until they are dried out but not hard, for 15-20 minutes.

Now heat 1 tablespoon of vegetable oil in a large skillet over medium heat.

Fry the tortilla pieces without crowding, until crisp from both the sides. Transfer it to paper towels to drain extra oil.

In a large skillet, heat the green sauce and turkey stock over moderate heat until simmering. Add the fried tortilla pieces one by one, pushing the tortillas under the sauce with a spoon.

When all of the pieces have been added, reduce the heat to low and simmer for 5 minutes.

Sprinkle the turkey and cheese over the chilaquiles and simmer until the turkey turns hot and cheese is melted, for about 5 minutes.

Serve immediately from the skillet with tomatillo salsa.
