Instructions

  1. Enjoy delicious buffalo chicken dip

    • 1

Boil two large boneless, skinless chicken breasts. You can also use canned chicken, but using fresh chicken provides a better flavor. After the chicken is completely cooked through, set it aside to cool. After it has cooled, finely shred the chicken.

    • 2

Open both packages of cream cheese and, while the chicken is boiling, allow it to sit out at room temperature to soften. After the cream cheese has softened, place it in the mixing bowl.

    • 3

In the mixing bowl, along with the cream cheese, mix in 8-ounces of either ranch or blue cheese dressing (whichever you prefer), HALF of the shredded cheese, 2/3 of the diced scallions, the minced garlic, and approximately six-ounces of Frank's Hot Wing Sauce, to taste.

    • 4

Blend, thoroughly, with the mixer. After it is fully blended, toss in the finely shredded chicken and continue mixing it until the chicken is fully assimilated into the dip.

    • 5

Spoon the mixture into the casserole baking dish, spreading it evenly in the dish. Put a lid on the dish and place it in the preheated oven for 15-20 minutes, or until the edges are bubbling. Pull the dip from the oven and sprinkle the remaining shredded cheese and diced scallions over the top and place back in the oven for 5-10 minutes, or until the cheese is lightly browned.

    • 6

Serve with tortilla chips while still warm and enjoy!
