How to make foil baked fish with vegetables

This is one of my favorite recipes!!! Very low in calories and delicious. And simple to make!!

Instructions

Things You'll Need:

  • 1/3 Cup Orange Juice with no pulp
  • 2 TBSP Malt Vinegar
  • 1 1/2 TBSP Soy Sauce
  • 4 Boneless White Fish Fillets (about 1 pound)-Tilapia/Flounder are my favorites to use
  • 1 Cup Fresh Brocolli Florets
  • 1 Cup Carrots Sticks Cut Thin
  • 1 Cup Celery Sticks Cut Thin
  • Tin Foil
  • Baking Sheet
  1. Step 1

    Preheat Oven to 450 Degrees

  2. Step 2

    Make Sauce: Combine Orange Juice, Soy Sauce and Vinegar

  3. Step 3

    Take Heavy Duty Tin Foil and Tear 4 equal sized sheets. Place 1 piece of fish on each piece of foil.

  4. Step 4

    Divide each vegetable into 4 equal portions. Place equal portions of each vegetable on each fish fillet. Pour equal amounts of sauce over vegetables and fish. Wrap each packet up tightly.

  5. Step 5

    Place each packet of vegetables and fish onto cookie sheet.

  6. Step 6

    * Bake at 450 degrees for 30 minutes. After you remove from oven, let sit for a minute or so.

  7. Step 7

    Serve and enjoy!

Tips & Warnings
  • When you open packets, they will be very hot and steamy-BE CAREFUL not to burn yourself
  • You may use other vegetable if you like-thinly sliced pepper, cauliflower, zucchini-all work well. Or you can 'add or subtract' the veggies in the original recipe. I will often make this with just broccoli
  • If you like garlic, add some fresh crushed garlic into the sauce
  • Delicious over white rice
  • May be served inside foil or removed from foil
  • There will be extra juice. If using rice, it will absorb the juice. May also be served with crusty bread to soak up juice
  • For even another added flavor, a splash of lemon juice may be added
  • As stated above, when opened, it is very hot.
  • If fish is even a bit frozen or thick, test before serving to make sure it is ready. Fish should be 'flaky'
