Things You'll Need:
- Chicken or vegetable broth
- Bottled Asian fish sauce and/or soy sauce
- Fresh garlic
- Fresh ginger
- Dried Asian udon or soba noodles
- Your choice of meats and vegetables

Step 1
In a large stock pot, bring 4 - 6 cups of chicken or vegetable broth to a low boil, with 4 peeled whole cloves of garlic and a small peeled knob of ginger added to the broth for flavor.

In a separate pot, cook noodles according to package instructions.

Prep any vegetables you wish to add to the soup. Some great additions would be shredded carrot, baby bok choy, sliced scallions or shredded zucchini.

Using a slotted spoon, remove the garlic and ginger from the broth. Add the vegetables, and cook until they reach desired crispness. This is also a great time to add any meats you wish, like leftover chicken or turkey off the bone, sliced cooked pork or raw shrimp (allow shrimp to cook for one minute).

In the last minute of cooking, add 3 tablespoons of fish sauce or soy sauce. Taste for seasoning. Add more sauce to taste.

Take the broth off the heat. In a warmed bowl, place a single serving of noodles, and then top with a large ladle of the finished soup.
