Buy your ingredients at an Asian market. You'll find fresh ingredients that correspond to your vegan needs.

Have your ingredients ready. It's so much easier to assemble your sushi when the ingredients are set out in an assembly line.

Use fresh ingredients for your vegan sushi.

Cook your rice according the directions listed on the package.

Cook the rice until it is tender but firm.

Place the rice in a glass bowl after cooking, and sprinkle 2 tbs. of rice vinegar and 1 tbs. of sugar on top.

Mix the rice with a large wooden spoon.

Cover the rice bowl with plastic wrap and wait until the rice reaches slightly above room temperature.

Peel your avocado and remove the central seed.

Peel a hothouse cucumber and remove the seedy pulp.

Slice the avocado and cucumber into long thin strips.

Lay out your bamboo mat on a table.

Toast the sheets of nori by holding them over a flame with tongs for a few seconds.

Place a nori sheet on the bamboo mat.

Place a small bowl of water with a little rice vinegar mixed in near the mat. You will need to dip your fingers in the water while you are working with the warm rice.

Wet your hands and take a one cup of rice into a small handful.

Pat rice onto your nori sheet, 1/3 of an inch or less. Spread it over 2/3 of the seaweed roll and leave the other 1/3 bare.

Layer the avocado slices and cucumber.

Sprinkle the filling with sesame seeds.

Roll the sheet of nori using your bamboo mat from the filled edge towards the seaweed-only edge. Seal the seaweed-only edge of the roll with rice vinegar.

Cut your vegan sushi with a serrated knife.
