3 everything bagels
8 breakfast cooked breakfast sausages
1/2 yellow onion, chopped
4 ounces marscapone cheese
1 cup shredded cheddar cheese
1 cup half & half
1 tablespoon everything bagel spice (Find a homemade recipe here!)

Add an even layer of shredded cheese on top. Set aside.
In a large bowl, combine the half & half, eggs, and everything bagel spice. Whisk well.
Pour the egg mixture over the strata. Cover and store in the refrigerator for 4 hours or overnight.
When you're ready to cook, pre-heat the oven to 375 degrees Fahrenheit. Bake for 45 to 50 minutes, or until the top turns golden brown.
Serve on a bed of leafy greens. For even more flavor, add a drizzle of hot sauce or a spoonful of salsa.
