Your willingness to do something she likes when you don't shows how much you're thinking of her. So, does she like the opera, musicals, plays or the ballet? Then take her there. Maybe she's more outdoorsy and loves a picnic. Bring some music and candles and have a romantic early evening picnic. Maybe she loves to dance but you don't know how. Sign up for a dance class and take lessons together. There's a gift she'll enjoy for weeks. Consider other things she's always been interested in learning and take the class with her.
