Baked chicken and rice is an easy dish to prepare for a casual dinner with your family or some friends. It has many variations and many ingredients can be substituted to suit your specific tastes. Following are a few baked chicken and rice recipes to get you started. Does this Spark an idea?

  1. Recipe One

    • Place a frying pan on the stove and turn the heat setting to medium. Add 1 tbsp. of butter and move it around with a wooden spoon while it melts. Then add 1 cup of uncooked rice. Keep moving the rice around with your spoon for two to three minutes and then add half of a small diced onion. Wait two minutes and then pour in a can of cream of celery soup and 2 cups of water. After the water, you can add 1 1/2 cups of broccoli. Add as much chicken as will fit in the frying pan. Cook for five minutes and then transfer to a casserole dish. Bake at 375 degrees F for one hour. When you remove the chicken and rice dish from the oven you will need to wait five to 10 minutes before serving it so that the rice isn't runny.

    Recipe Two

    • Set your oven temperature to 350 degrees F while you are getting together all of the ingredients. Make a pouch out of aluminum foil. It will need to be big enough to hold two chicken breasts and some vegetables with rice. Place the two chicken breasts in the foil and then cover with half a can of dice potatoes and half a can of diced tomatoes. Then sprinkle on 2 tbsp. of rice, 1 tbsp. of Worcestershire sauce and a sprinkle of basil. Finish the pouch off with a dash of salt and pepper. Close the aluminum pouch and bake for an hour and a half. Be careful when opening the pouch because steam may come out and it will be hot enough to burn you.

    Recipe Three

    • Sprinkle a dash of salt and pepper on each of four boneless, skinless chicken breasts. Place the chicken breasts in a casserole dish and then pour in a can of cream of chicken soup. Add half a can of milk and half a cup of rice. Finish off the casserole with 4 tbsp. of butter and four chopped cloves of garlic. Bake in the over for an hour and a half. Wait five to 10 minutes before serving. As an option, you could add 1/2 cup of celery to the dish.
