With its infusions of soy sauce and five spice powder, Chinese cuisine has been making inroads in American cities, both big and small, for more than 50 years. Over time, these steamy rice and noodle-based dishes have become favorites for those in the know, who in turn have shared them with the rest of the country, thankfully. Rather than being pigeon-holed in a Chinatown setting, Chinese food has been adopted and embraced nationally, much in the same way that Mexican food has spread across the Texas landscape. While some would say that this has led to the adulteration of the true Chinese culinary experience, just like any other national cuisine, there are impostors…and then there’s the real thing.

In this free Chinese cooking class on video, learn how to make a famous dish called General Tso’s chicken (a.k.a. General Joe’s, General Gau’s, General Tao’s, General Tsao’s, General Chow’s—and a number of other variations).
