There are many types of guacamoles which call for different ingredients, but all make great use of the avocado. Guacamole can also be used with eggs for a great Mexican breakfast, and makes a great snack at your next football party.
In this series of free videos, chef Ian McSwain demonstrates how to make this classic Mexican dish. He shows you how to pick the best avocado, a great trick for removing the avocado seed, how to cut and scoop and avocado, and then how to mash it up, and add ingredients like onions, jalapeƱo juice and cilantro. He also shows you how to make your own homemade chips from corn tortillas, how to fry them and prepare them for the guacamole topping.
Ian McSwain Ian McSwain is the owner and chef of Passion Foods, Inc., in Miami, Florida. Passion Foods is a full service caterer business. Ian was born and raised in New Orleans and began cooking at an early age from watching his mother and grandmother. He eventually studied nutrition in college, and learned macrobiotic cooking at the New Orleans Macrobiotic Association. Traveling the world, cooking in Japan, Italy, France and India, Ian eventually graduated from the French Culinary Institute in 1995.
