Hi, I'm Michelle Karam with Dishes by Michelle in Los Angeles, California. I'm here today to talk to you about make ahead appetizer recipes. Today, we're going to be making what I like to call tomato, chive, and goat cheese surprise. Our ingredients for this recipe are super simple, super easy, and super delicious. We have cherry tomatoes, chopped chives, and goat cheese that has been sitting out at room temperature, so it's kind of a little bit soft, so it's easy to work with. So, the first thing we're going to do, is we're going to take our tomatoes that we've washed and dried, and we are going to coat them in the goat cheese. So, basically what you'll do is, you'll just take a little bit of goat cheese, and you'll just start moving it, and working it, all the way around each tomato. So, there you go. And, you can kind of roll it in your hand, too, to give it a little bit of smooth, and it's okay if there's a little bit of red tomato showing through, because that's the surprise of the tomato. Alright, so let's just put that in there, and we'll just keep rolling. And, you just need a very small amount, you're not really packing on a whole great thick coat on there, it's just real thin and easy. Get a little roll, drop it right in there. So, the reason why I like to make these ahead of time is because, first of all, they're super simple, and second of all, they keep pretty well in the refrigerator. If you make these a couple hours ahead of time, you will literally have no problem just pulling them out of your fridge when your guests arrive, and be able to enjoy your time at your party. So, our last step of this easy recipe is, we're just going to go ahead, and take our tomatoes that haven been covered in the goat cheese, and we're going to roll them in the chives, and give them just a little coat of the chives. We don't necessarily want to cover all of the white of the goat cheese, because you still want them to be able to see a little bit of what's going on under there. So, give them a quick roll, and as I said, these are perfect make ahead appetizers. Pretty much, the colder they are, the better they'll taste, because those tomatoes will really crisp up, the cheese will get really firm, and it's all around for a good appetizer.
