Hi, this is Greg DeMichiel, Executive Chef of The Hudson LA. Today, I'm going to show you how to preserve black olives. So, the ingredients that we're going to be using is uncured olives, a pot, and also I have a brine that I made earlier. My preference with a brine, especially for black olives, red wine, garlic, crushed chilies, just big flavors. We're going to bring that up to a simmer and then we're going to add the olives to it once it's up to a simmer. Alright now that the brine is up to a simmer, I'm going to add the black olives, turn off the heat and let it steep for about 30 minutes. Alright now that the olives have steeped for 30 minutes, I'm going to place them into a container, pop the lid on and they're going to sit in my refrigerator for about seven days until they are ready to go, and on that seventh day, make sure you invite all your friends over because you are going to have some banging olives.
