They represent humans in a very odd or infantile way. Generally, a monkey in a dream could symbolize that there is an immature attitude that might need to be dealt with consciously, or there is a sense of being vulgar, or that there is a cultural norm that is not accepted consciously in the outside world or in the cultural society the person lives in that needs to be dealt with. The unconscious brings about these images so that they can be amplified and discussed. What I mean by amplified is, what does the monkey mean to the person? And then from there, you take it to a more cultural and generalized context. But monkeys, very playful as they are, can also mean that you need to approach that image when you're working with the psyche and the unconscious, in a very playful and artistic manner."
