Hi, I'm Gabi and I'm going to show you how to make tortellini soup. It's really easy. First you need a pot and what I've got here is some vegetable stock. And that just goes right in. And then you want to add of course your tortellini. And this is just plain dried cheese tortellini. And then I've got some tomato paste that I'm going to add and that's just going to give the broth a little bit of body. And what you want to do is whip that in so that it's incorporated into the broth. It's also got some salt in it so it will give it a nice rich flavor. And I'm going to add a little bit of smashed garlic. Go ahead and whip that in too. And right back here is sort of an assortment of vegetables that I'd had laying around. I have bell peppers, carrots, parsley and green onions. You can really use anything. So then what you want to do is just add that. Take your big spoon and stir it up and this is going to cook over a medium high heat for about 15 - 20 minutes just until the tortellini has softened and you can serve it with a little sprinkling of Parmesan or with a piece of toast or just by itself and it's just delicious.
