Hi, my name is Charlotte Skiles. I'm a nutrition consultant and clinical herbalist with Eat in Peace Wellness Consulting located in Austin, Texas. And today I'm going to be talking to you about pro-biotic foods. And pro-biotic foods are basically fermented foods. So what the fermentation process involves is adding either yeast or bacteria to a particular food. That yeast or bacteria goes in and eats the sugar in the food, isn't that interesting, making it more sour and that's how you get that fermented pro-biotic rich food. Because basically what we're talking about is food for the digestive tract, food for all of the lovely bacteria that exists in GIs that make beneficial things for our bodies, vitamins and whatnot, by products. So what are fermented foods? Kimchi, sauerkraut, kombucha, these types of foods. Yogurt even is a fermented food. And you can tell, they're all sour, they're all very alive. These pro-biotic fermented foods have a lot of enzyme activity in them, a lot of life and they benefit us greatly. So that's what I have to say about what are fermented and pro-biotic foods.
