Series Summary

Fermentation in food processing typically refers to the conversion of sugar to alcohol using yeast under anaerobic conditions. A more general definition of fermentation is the chemical conversion of carbohydrates into alcohols or acids. The benefits of fermentation include enrichment of the diet through development of a diversity of flavors, aromas, and textures, biological enrichment of food substrates, and producing important nutrients or eliminating anti-nutrients.

So, now that we know that fermented foods aren't bad for us, but rather, can lead to better health and nutrition, how do I implement fermented foods into my diet?
