Hi, my name is Lori with Figs Catering in Austin, Texas on behalf of Expert Village today we are going to show you how to make an entire Thanksgiving meal. Now there is several things to consider whenever you are making gravy in regards to consistency. As you can see here this consistency is a little bit runny but I'm going to go ahead and add in a little bit more chicken stock and I'm going to let it reduce a little bit and what I mean by that is I'm going to let some of the moister evaporate it out and what is going to do is condense to a nice chicken flavor. The other thing you want to consider when you are making gravy is that the longer that it sits whether it would be on your table or especially on your burner the thicker it is going to get. So if I'm going to make this with a Thanksgiving dinner and it is in a few hours I'm going to add a little bit more stock to it just so it stays nice and gives it a nice consistency. If you add too much stock don't worry about that you can just place it back on your burner and go ahead and reduce it. Now this particular consistency is good because by the time it is time for a Thanksgiving meal it is going to have set up just a little bit and gotten thicker which is what we want.
