" Hi! I’m Louis Ortiz on behalf of Expert Village and today I’m going to show you a quick and easy way to zest a lime and this will work for lemons and oranges and anything for that matter but I choose a lime because I like margaritas. I’ve got a tool here called a microcline and this makes the job much, much easier and this is a zestier grater tool and it has blades along the length of it that are just shallow enough so that you get just the color off the top of this guy and what we’re trying to avoid is the pift which is the white material on the underneath side which will make a recipe bitter. So all that we’re going to do is lightly and I don’t really need to apply that much pressure on this guy I’m just holding this at an angle and sliding the lime across…and a lot of times you’ll use a real vibrant citrus zest like this to throw into recipes or cold sauces right at the very last so that it blooms immediately and it has a real nice vibrant flavor to it almost like a fresh herb being thrown in right at the last so it’ll bloom for you immediately. So I just knocked off the underside of this guy and you can see how I’ve taken off just the color and it went just steep enough not to get to the white part and here is the zest itself and we can remove it from the underneath side in our cutting and we’re ready to go and that’s a quick and easy efficient way to zest a lime."
