"While our marinara is cooking we’re going to go ahead and cook off our spaghetti. One of the things you want to remember when you have your spaghetti is to make sure you have your pot of boiling water ready to go and your water should be to a rolling boil. The second thing you always want to do whenever you cook spaghetti, and this really does apply to any pasta, is you want to make sure you add salt to your water to make sure it’s a nice salty flavor because this is really your only opportunity to flavor your pasta and you want to make sure that every layer of your dish has flavor. So I’m going to place about half a cup of coarse, about a half a cup coarse salt into my water here, and let it go ahead and flavor and it should taste like seawater, that’s what you’re looking for. Okay, now that I’ve got my water ready to go, I’ve got my pasta here. And today we’re going to be using spaghetti, but keep in mind, you don’t have to use spaghetti, if you have something else on hand, whether it’s farfalle, or fettuccini, or whatever it is you have on hand, feel free to use that. So for our traditional spaghetti and meatballs, we’ve got our spaghetti and today we’re using a dry organic spaghetti and we’ve got about a pound. We’re going to go ahead and cook all the pound of spaghetti, which will feed about six people, four to six people. And our spaghetti is organic but that doesn’t mean it has to be, but I just prefer to use organic pasta whenever possible because they are a lot fresher. This dry pasta is going to cook for about ten to thirteen minutes depending on your altitude and you can also use fresh pasta. Fresh pasta is really great, but you have to keep in mind whenever you use the fresh pasta make sure that you salt your water. But make sure that you know that your cooking time is going to be reduced tremendously, so for fresh pasta you’re going to cook it for about three to five minutes. And from here I’m going to take half of my spaghetti, I’m going to break it in half and drop it into my pot. I’m going to do the same thing with the other half of my spaghetti. All right, now I’m going to let it cook for about ten minutes. "
