"Now we are going to show a basic procedure for butterflying a protein. I got a pork loin here that we have taken the fat cap off of. Usually the recipe this would call for is so you can butterfly the meat to make it thinner or it would give you the option to do that if you try to shorten the cooking time. Simply because if we try to cook the protein just as this thickness obviously it is going to take longer if it was thinner. So what I'm going to do is just simply take the knife parallel to the cutting board and I'm going to press down on the protein just a little bit so I can keep it study. I'm just going to cut this in half and slide the knife through every so gently that way and that is a actual butterfly. "
