I'm going to show you how to make a seafarer's double. Well now we've cooked our petrale sole and it's on the side resting and we're going to mix our lemon dejonaise. This is a really fun sauce. I use it for everything. I even use it without the dill for roast chicken it's perfect. I've been making it for years. What we're going to do is dice up our fresh dill, fresh dill is always different from dry dill. I'm going to throw that in our bowl and same with lemon juice you definitely want the fresh stuff especially to go with fish. Nice big lemons I just usually hold my left hand under the lemon so if there is any seeds, like there goes one it doesn't go into our sauce and I'm not fishing around for it. Let's put a little bit more lemon juice in and now I'm going to get some dejon mustard (love the dejon mustard) salt and pepper, I'm going to hit it with a couple of shots of soy sauce. Then some nice sour cream about a cup and a half I'm going to stir it all together, it looks great, it's going to look great with this fish. When we come back we're going to plate our petrale sole with lemon dejonaise.
