"Hi i'm Karl James of Creolesoul Catering located in Round Rock, Tx and on half of Expert Village i'm here to show you a chicken marsala recipe. Lets take a look at our chicken breast here were gonna take our chicken breast were gonna need to pounded them down so were gonna put them in a bag like this you can actually use wax paper for me it's a little neater in a bag i'm gonna do a couple at a time. And you can use the side of a mallet or if you don't have a mallet have a rolling pin you can actually use that. What were gonna do is smash these down to about a quater of an inch. If i put in a bag like this it keeps your cutting board pretty clean you don't have the chicken all over your cutting board and like i said you can use wax paper to do the same thing. Since you don't want to get the crosse contaminated with the chicken. So we continue to pound those down to a quarter on an inch. So you look at it and we flatten them down there's chicken breast."
