Hi, This is Dave for Expert Village. Today we’re going to make some Cornish game hens with autumn fruits. OK, now that we have our game hens prepared we’re ready to put on our marinade. These should be in overnight, you could probably get away with four or five hours but you want to get all that flavor, all though and though the hens. Also with the fruits, we’re using apricots and prunes at the moment, but you can use in addition or instead of, you can use dried cranberries or any other dried fruit, even apples would be great in this dish. So here we go, we’ve got our game hens prepared, we’re about to pour out marinade over the top of them, because we want to get everything completely covered. Now this stage, you can also do this if you’re doing more birds than this, you could also put this in any type of a plastic bag or even if you’re doing one of them you could put them into a small baggie, a zip-lock bag and marinate them overnight, but it is always best to do it overnight if possible. Okay, at this point you’ve got the marinade over all the birds evenly and you just place some plastic wrap over the top and pop them in the refrigerator.
