Welcome back to Catering Tips 101, we're in the middle of creating Roasted Beef Tenderloin Crostinis. Here is our tenderloin. It has already been rubbed. I've got an oven preheated to 350. I have my stove top griddle nice and hot to the touch and I'm going to give it a light brushing of some olive oil which I have standing by. To this I'm going to grab my beef tenderloin and I'm going to apply it right to the griddle. We're going to sear in that rub into the meat and create a yummy crust before we roast it. Here we go, ready for the sizzle, oh yea. Beef tenderloin is a lovely cut of meat. It is the creme de la creme if you ask me. It's great for catering for appetizers because the quality is delicious, the meat is almost always delicious, juicy and tender and you can use it for a lot of different things. For my dish, the crostinis, it is going to be sliced nice and thin and set on top of a crostini toast so you can pop it in your mouth in one bit and the size and the flavor and the visual effects is going to be gorgeous. Wait until you see it. So let me get this out of the way. I have waiting for the meat after it sears, I am going to put it on a parchment paper covered baking pan. You can use a cookie sheet or roasting pan, whatever you have. Let's take a look and see how she is doing. Oh nice. So it really just needs a few minutes on each side. So while this is finished searing I am going to make sure that my next ingredients are lined up because while this is in the oven we are going to make a sauce that is going to sit on top of the crostinis.
