Now that we've created our rub for our beef tenderloin I'd like to introduce you to it. This is beef tenderloin. It comes packaged in lots of different ways if you go to your butcher. You are also able to get it without the packaging but this is a nice and easy way to transport it and store it in your refrigerator. I'm just using a regular pair of kitchen shears and I'm going to release the beef and give it a little rinse. When you purchase meats, fish, chicken, whatever I always recommend giving it a rinse with some nice clean clear water, running water, to get rid of any build up and extra blood that is adhering to the fats and the proteins. Once you give it a good rinse I like to drip dry it for a moment and pat it dry with a paper towel. Now you see I have a lot of my gear already in front of me nearby. I think it's always wise to think ahead of what you're going to be making so you can have all of your equipment at a finger's notice. I've got my tray here for prepping my beef tenderloin. I've got my gloves which I will be putting on when it's time to handle my rub. I have some twine or kitchen string because beef tenderloin has an end right here that is better to adhere to it, it cooks better and it makes an even tenderloin slice, if that makes sense. I am going to put on my food handler gloves and I am going to show you how to wrap a beef tenderloin when we come back.
