I'm going to show you how to make the sponge layer for our yule log cake. The ingredients you'll need are three large eggs, three egg yolks, a pinch of salt, three quarter cups of sugar, one half cup of cake flour, and one quarter cup of corn starch. Before we start mixing our ingredients, make sure you preheat your oven to four hundred degrees. We're going to use your classic jelly roll pan. It's ten by fifteen and we're going to butter the pan itself first, and then stick the parchment paper inside the pan and butter it again. Now your pan is prepared for the batter. Alright, over at the stove top, we're going to start a pot of water with a little bit of water in it boiling. And we're going to get that ready for a double boiler. So the heat is on. And in our mixer, we're going to add in our three eggs, our three egg yolks, our pinch of salt and our three quarter cups of sugar. And we're going to give that a whisk. When it's all fully blended, we're going to take that bowl and set it over our hot water. We're going to let that egg mixture come to lukewarm. Just to where you can touch it with your finger. So we've placed the egg mixture onto the simmering water and we're going to keep whisking it until it becomes lukewarm. Alright. Test it with your finger and when it's lukewarm, we're going to take it out and we're going to put it back onto our mixer. We're going to whip it until it's totally cool. The egg mixture should make a nice ribbon. When it's fully mixed, it'll make a nice ribbon coming from there. It's tripled in size, very foamy and a nice little ribbon trickles down.
