Okay, perfect. They're just right. You don't them much darker than that, because otherwise they will be very hard to handle. So get one of these--work very quickly--get one of these flexible spatulas, really essential to do this properly. And as your cookie sheet cools, it might do that. And then, just sort of cradle it over the rolling pin, as such. Sort of ease it down, and you have to work really fast or it's not going to stay in position, and after it starts to cool it's just going to start to break if not. Okay, so we've got it into its position there. We'll just wait for those to cool. In the meantime, I'm going to go get the mache out of the fridge--or lamb's lettuce as it's referred to in English, although in the culinary world people just call it mache--and it's a very, very mild lettuce, which is going to be really a nice accompaniment to the strong flavors of the aged parmesan cheese. You could use an arugula, if you wanted to really have a kick of pepper, that would be fine, but for these purposes--and this bag won't open--you'll see how delicate these little leaves are. So I take them out of the bag here. There's something in there--a little dirt, a little dirty even though it's pre-washed supposedly. Take a little bit more out; we're not going to need that much. Okay, and we wait for these to cool, and we will assemble with the dressing and put it on the platter; just one minute--put this back in the fridge.
