Hi, I'm Minerva Vázquez from Miami, Florida. And as a personal chef and cake artist, I've been cooking and baking for the last 20 years. Today, we're going to be making pancake apple butter cakes. Let's begin with the cake ingredients. Fist, you need four eggs at room temperature, then three-quarters of a cup of brown sugar, half a cup of apple butter sauce, two tablespoons of fresh lemon juice and additional to that, half a teaspoon of vanilla. Half a cup of milk, half a stick of butter, unsalted. You need one and half cups of pancake flour, a pinch of salt and one teaspoon of cinnamon, all sifted together. Let's begin by whisking the four eggs, one, two, three, four, at medium speed. Beat for about two minutes, then add slowly, the brown sugar. Add the butter, which is at room temperature, it's a lot easier to blend in, add the milk. You want all your, all of your ingredients to be at room temperature. Add the lemon juice and the vanilla, and finally, add your apple butter. I love this apple butter, this is apple sauce, very concentrated. As you can see, it has a brown, a beautiful brown color and the aroma of the caramel is so rich, it's really good, I love it. Now, once you have all your ingredients well incorporated, you turn it off. And now, you're going to fold in the flour mixture. Now, remember, this is the pancake flour, sift it with, sift it with the salt and cinnamon, fold in all the ingredients. This is a very moist cake, it is absolutely wonderful. You maybe thinking, is this a dessert, is this a breakfast? Well, it really doesn't matter, because it is so moist, it is so delicious, it is so tender. That it would be perfect for any day of the week or just any time, you just choose, have your own celebration with this cake. Now, I already preheated my oven at 350 degrees and I have already an eight by three inch round cake, that I have already greased and lined with parchment paper. Once all my ingredients are well incorporated, then we're going to pour the batter inside the cake pan.
