Hi, I'm Chef Bailey, private chef with Kitchen.com, and I am standing in the kitchen today of my favorite restaurant, Freda's Caribbean and Soul Cuisine. Today, we'll be making a Jamaican oxtails and butter beans. The first thing we want to start with is about two pounds of oxtails. We want to season it lightly with some salt and pepper and of course, garlic. We're going to go with oregano as well. We have garlic diced, one small onion, diced. We also have a few sprigs of thyme and browning sauce. Now browning sauce is good if you don't feel like browning your actual meat prior to cooking it like a pre-brown, you can just use a brown sauce and you just want to get in there with your hands and really marinate the meat and you're probably wondering where the butter beans are, that goes like at the very end of your meal like towards the last five minutes of the cooking time and you're going to cook this in about two tablespoons of vegetable oil. Now when you're cooking it this way of course, it's the longer version, oxtails takes a while to cook so you're looking at about three, maybe about four hours cooking time on the stove but you're going to keep checking it from time to time and adding water but since we don't have that much time, I will show you what the end result looks like. Here are the oxtails with butter beans. Typically, I would serve these with rice and peas or white rice, just to soak up all that gravy.
