Hi, Chef Christo Gonzales, and today it's all about carrots. We're going to be making a lot of different carrot salads today and right now I'm going to be making you a sweet carrot salad. It's going to have carrots, some raisins, a little honey, a little olive oil, a little bit of vinegar and some lime juice. So here's how we do it. We cut up our carrots. You can cut them in any way, shape or form that you want. I happen to like this little bias cut. So I'm just sort of cutting them on an angle. These are little baby carrots. You can just buy them in bags. They're already washed and peeled. They're ready to go. The problem with these is they're a little bit hard to handle so be very careful when you're cutting them. We've got our carrots already. We have our raisins and this salad comes together so very fast. So come on in a little bit closer and I'll show you what we do. We take our carrots into a bowl. We're making a sweet carrot salad. We'll put some raisins in that bowl, squeeze a little bit of lime juice, just a touch of red wine vinegar, just a touch of olive oil and to sweeten it up, we're going to be using some honey. Once again, you mix it all around. This is almost like your classic carrot raisin salad but with a little bit of a twist, a little bit of a grown up flavor with the vinegars, your lime juice and your olive oil. So it's all mixed up and we're going to put it on our plate. Let's put a couple more raisins on top just to brighten it up, a little bit of salt, a little bit of pepper, wakes everything up and makes it that much tastier. So there you have it, a nice little carrot, sweet carrot salad. So here we have our sweet carrot salad with raisins, lime juice, honey, vinegar and olive oil. Let's give it a little taste. Um, that's so good, really special. I can see how this would be really nice with a roasted meat, lamb, a steak. You can have this with chicken. I'm Chef Christo Gonzales and I'll see you soon.
